Betty's Breakfast Smashburgers
Directions
Preheat your Blackstone griddle to medium heat, leaving one cooler zone for the eggs and to keep the hollandaise warm.
Cook the bacon until crispy, turning as needed. Move it to the cooler side of the griddle to keep warm.
Form the ground beef into four patties, making a slight indentation in the center of each. Season both sides generously with the Blackstone seasoning.
Place the patties on the hot griddle and cook for 3–4 minutes per side, or until they reach your desired doneness. During the last minute of cooking, top each patty with two slices of American cheese and cover with a melting dome until the cheese is fully melted.
Prepare the hollandaise sauce according to the package directions. Season with Blackstone Garlic Butter Seasoning to taste and keep warm away from direct heat.
Butter the cut sides of the brioche buns and toast them on the griddle until golden brown.
Lightly grease the cooler zone of the griddle and cook the eggs sunny-side up until the whites are set and the yolks remain runny. Season with salt and pepper.
Assemble each burger by layering the bottom bun with the cheeseburger patty, crispy bacon, a sunny-side-up egg, and a generous spoonful of hollandaise. Sprinkle with the chopped chives, add the top bun, and serve immediately.
