Directions
Preheat the Pellet Smoker: Preheat your pellet smoker to 225°F (107°C)using wood pellets like hickory or mesquite for a bold smoky flavor.
Prep the Chicken Wings: In a large bowl, toss the chicken wings with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
Smoke the Chicken Wings: Place the seasoned chicken wings directly on the preheated smoker grates. Smoke at 225°F for approximately 2 to 2.5 hours or until the wings reach an internal temperature of 165°F (74°C).
Prepare the Homemade Buffalo Sauce: In a saucepan over medium heat, melt the butter. Stir in the hot sauce, white vinegar, Worcestershire sauce, garlic powder, cayenne pepper, and salt. Simmer for 5-7 minutes, stirring occasionally. Adjust the heat level to your preference.
Toss Wings in Buffalo Sauce: Once the chicken wings are smoked and cooked through, transfer them to a large mixing bowl. Pour the homemade buffalo sauce over the wings and toss until well-coated.
Make the Blue Cheese Dipping Sauce: In a separate bowl, combine mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, salt, and black pepper. Mix until well blended.
