Directions
Preheat your griddle to medium-high heat.
Add a small amount of oil and cook the bacon until crisp. Move the bacon to one side of the griddle when nearly cooked.
In a large bowl, combine the potatoes, onion, and garlic. Season with salt, pepper, smoked paprika, and a drizzle of oil. Toss to coat.
Add the potato mixture to the griddle and cook in the rendered bacon fat, stirring occasionally until the potatoes are golden brown and the vegetables are tender.
While the potatoes cook, combine the sausage meat, bell peppers, and courgette in a bowl. Season with additional smoky rub and toss with the smoky red pepper dressing, if using.
Make space on the griddle beside the potato mixture and add a little more oil if needed. Add the sausage and vegetable mixture and cook for about 5 minutes, stirring occasionally, until the sausage is browned and cooked through.
Chop the cooked bacon into bite-sized pieces and return it to the griddle.
Combine the potato mixture with the sausage mixture and stir everything together. Taste and adjust the seasoning as needed.
While the stir fry finishes cooking, fry the eggs on a separate area of the griddle to your preferred doneness.
Divide the stir fry among serving plates and top each portion with a fried egg.
Finish with a drizzle of hot sauce and serve immediately.
