Directions
Preheat your griddle to medium-high heat and lightly coat the surface with oil.
Place the butter in a griddle-safe pan or foil cup and allow it to melt gently.
Add the garlic to the melted butter and let it infuse while you prepare the bread.
Brush one side of each slice of brioche generously with the garlic butter.
Place the bread on the griddle, butter-side down. Brush the top side of each slice with more garlic butter.
Cook until the bottom side is golden brown, then flip the bread and move it to a cooler area of the griddle.
Divide the Gouda, chili cheese, and mozzarella evenly between two slices of bread, layering the cheeses on the toasted side.
Place a melting dome or cloche over the bread and cook for about 2 minutes, or until the cheese begins to melt.
Top each cheese-covered slice with a remaining slice of bread to form two sandwiches.
Cover again and continue cooking, flipping occasionally, for 2–4 minutes until the bread is crisp and golden and the cheese is fully melted.
Remove the sandwiches from the griddle and let them rest for 1 minute.
Slice in half and brush with any remaining garlic butter before serving.
