Difficulty
Medium
  • 2 lb ground chicken
  • 1 cup panko
  • 1 egg
  • ¼ cup Parmesan cheese
  • 1 teaspoon Blackstone Tuscan Herb
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup buttermilk
  • 1 egg
  • ½ cup buttermilk
  • ¼ cup Parmesan
  • ½ cup panko
  • 3-4 tablespoons frying oil
  • 1 jar store-bought marinara
  • 10 slices mozzarella cheese
  • 6 sub rolls
  1. In a bowl, combine the ingredients for the chicken parm patties and mix well, forming 6 equal rectangular-shaped patties.
  2. Set up a breading station with one bowl containing egg and buttermilk, and another with Parmesan and panko. Bread the patties by coating them in egg mixture followed by the panko mixture.
  3. Preheat your griddle to approximately 350 degrees and add the frying oil.
  4. Cook the chicken patties for 2-3 minutes on each side.
  5. Place an aluminum pan on the griddle and add the marinara sauce.
  6. Once the chicken patties reach an internal temperature of about 165 degrees, toast the sub rolls on the cut side.
  7. Build the sandwich by placing ¼ cup of marinara on each chicken patty, followed by slices of mozzarella cheese. Cover with a dome for 1 minute, then remove and assemble the chicken on the rolls. Top with additional marinara.
