These Better Mac Quesadillas combine all the flavors of a classic burger in a cheesy, crispy quesadilla. With seasoned ground beef, melty cheddar, and a tangy homemade sauce, it’s topped off with shredded iceberg lettuce for a satisfying twist on a favorite.
Ingredients
- 4 large flour tortillas
- 1 pound ground beef
- 1 red onion, diced
- 12 slices cheddar or American cheese
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1/4 cup relish
- 1 small head iceberg lettuce, shredded
- Salt and pepper, to taste
- Vegetable oil, for the griddle
Directions
- Whisk together the ketchup, mayonnaise, and relish in a small mixing bowl. Set aside.
- Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then add the ground beef and diced onions. Season to taste with salt and pepper.
- Cook the beef and onions for 5 minutes or until the onions are translucent and the beef is fully cooked through. Set aside onto a warm section of the griddle.
- Layer the cheese on top of the beef and then cover with a basting dome for 1 minute. While the cheese is melting, lay out the tortillas on the griddle.
- Use a spoon or heat-safe plastic spatula to spread the sauce on to the tortillas. Use two spatulas to evenly divide the beef and cheese into two tortillas.
- Top the meat and cheese with iceberg lettuce and then the other two tortillas. Remove from the griddle and cut each quesadilla into sixths. Serve immediately.
