Ingredients
- 1 pound 80/20 ground beef
- 1 (4-ounce) can diced green chiles
- 10 ounces frozen corn
- 2 cups cooked white rice
- 4 green bell peppers, halved and deseeded
- 1 (10-ounce) can red enchilada sauce
- 8 ounces fiesta blend cheese
- 1/2 bunch cilantro, roughly chopped
- 2 tablespoons fajita seasoning
- Vegetable oil, for the griddle
- Salt and pepper, to taste
Directions
- Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then lay out the bell peppers cut-side down. On the other side of the griddle, add the ground beef and season with 1 tablespoon of fajita seasoning, salt, and pepper.
- Cook the beef completely then add the rice, corn, green chiles, and cilantro. Add the remaining fajita seasoning, mix with spatulas, and cook for an additional 3 minutes.
- Pour 3/4ths of the enchilada sauce over the mix and stir for 1 minute. Flip the bell peppers then evenly divide the beef and rice mix between the 8 halves. Top the stuffed peppers with the remaining enchilada sauce and cover with shredded cheese.
- Cover the stuffed peppers with the griddle hood or a basting dome and let cook for 5 minutes. Remove from the griddle and serve immediately.
