Directions
Optionally, place two chopsticks on your cutting board with the steak in between. Use the chopsticks as a guide to slice the steaks at an angle, stopping the knife from cutting all the way through and creating a "waffle fry" pattern. Flip the steaks and repeat.
Season the steaks with salt and pepper, then cook for 2 minutes on high heat with a bit of butter and olive oil.
While the steaks are cooking, in a small mixing bowl, combine soy sauce, honey, garlic paste, ginger paste, lemon juice, lemon zest, sesame oil, and green onion. Stir well to evenly combine.
Flip the steaks and drizzle some sauce over the tops. Cook for an additional 2 minutes.
Toast the sourdough slices. Optionally, rub the bread into the beef fat, juices, and butter for added flavor.
Crack the eggs into a separate bowl, add salt and pepper.
Once the bread is toasted, place two pieces on your plate. Top with fried eggs and place the steak beside them. Optionally, drizzle with more glaze.
