Leftover Steak Roll-ups
Directions
Preheat the griddle on high heat with a bit of avocado oil. Add the chopped steak and diced onions. Sauté until the onions are translucent and the steak is warmed through. Sprinkle half the fajita seasoning over the mixture, along with a splash of oil and water. Mix well.
Add the corn and black beans to the griddle and sauté until heated through. Season with the remaining fajita seasoning. Once warmed, combine them with the steak and onions, then transfer the mixture to a bowl.
Lay out the tortillas on a flat surface. Layer each one with shredded cheese, followed by the steak mixture. Roll the tortillas tightly so the seam is sealed.
Reduce the griddle to medium heat, add a bit more oil, and place the roll-ups seam-side down. Toast until golden brown on both sides, about 2 minutes per side.
To serve, place a bed of shredded lettuce on a platter, arrange the roll-ups on top, and garnish with Greek yogurt or sour cream, pico de gallo, green onions, and avocado slices. Serve immediately and enjoy!
