  • 624 g ground beef (20% fat), divided into 8 portions (about 78 g each)
  • 8 slices mozzarella cheese
  • 4 soft white or potato burger buns
  • Marinara or pizza sauce
  • Pepperoni slices
  • Salt, to taste
  • Optional: Italian seasoning or a pinch of oregano
  1. Preheat your Blackstone griddle to high heat.
  2. Divide the beef into 8 equal portions and gently form into loose balls. Avoid overworking the meat.
  3. Lightly oil the griddle surface.
  4. Place the beef balls on the griddle and let them cook undisturbed for 10–15 seconds.
  5. Season with salt, then smash each ball into a thin patty.
  6. Cook for about 60–90 seconds, or until a deep brown crust forms around the edges.
  7. Flip the patties and season lightly again with salt.
  8. Spoon a small amount of marinara sauce onto each patty and top with a slice of mozzarella cheese.
  9. Add several slices of pepperoni to each patty. If needed, add a splash of water to the griddle and cover briefly to help melt the cheese.
  10. Continue cooking until the cheese is fully melted and the pepperoni begins to crisp.
  11. Toast the burger buns on the griddle.
  12. Build each burger by placing two patties on the bottom bun. Add an extra spoonful of marinara sauce and a sprinkle of Italian seasoning or oregano, if desired.
  13. Top with the remaining bun, give it a gentle press, and serve immediately.
