Ingredients
- 4 slices brioche loaf (even thickness)
- 1 jar of your favorite chocolate spread(not to show off but mine had pretzels and chopped almonds, thank you Tesco)
- 50g butter
- 50g mini marshmallows
- 50g graham crackers or biscuits of your choice. Digestives with the chocolate/caramel ones being a top choice.
Directions
- Preheat the griddle to medium heat.
- Slice the brioche into 4 evenly thick slices.
- Add butter to the griddle and toast all 4 slices until lightly golden.
- Spread a generous layer of chocolate spread onto 2 of the slices while they are still on the griddle.
- Top the chocolate-covered slices with mini marshmallows. Allow them to soften and melt slightly (use a hood or basting dome if available).
- Roughly chop or crush the graham crackers (or biscuits) into a crumb.
- Sprinkle some of the crumb over the melting marshmallows.
- Place the remaining plain slices of brioche on top to form two sandwiches.
- Carefully flip each toastie, pressing gently to keep the filling inside, and cook until both sides are golden and the filling is melted.
- Remove from the griddle and serve. Optionally, spread extra chocolate on top and finish with a sprinkle of biscuit crumb.
