Ingredients
- 2 medium flour tortillas
- 4–5 large eggs
- Splash of milk
- Salt and pepper, to taste
- 1 cup sharp cheddar cheese, shredded (divided)
- 1 Tbsp butter
- 2–3 sausage links or patties
- Salsa, for serving
Directions
- Fire up the griddle to medium heat.
- Whisk 4–5 eggs with a splash of milk, salt, and pepper, then stir in a small handful of shredded cheddar cheese.
- Cook the sausage on the griddle until fully browned, then move it to a cooler spot and cut it into smaller pieces.
- Butter four egg rings, place them on the griddle, and pour the egg mixture into them.
- Add sausage pieces to the eggs and cook until the eggs set.
- Remove the rings, flip the eggs, and cook for about one more minute.
- Place two cooked egg rounds inside each tortilla and fold into burritos.
- Place the burritos seam-side down on the griddle for one minute to seal.
- Sprinkle a layer of shredded cheddar directly onto the griddle, roughly the size of each burrito.
- Place the burritos seam-side down on top of the cheese and cook until the cheese forms a golden crust that sticks to the tortillas.
- Remove from the griddle and serve warm with salsa.
