Crispy breakfast potatoes loaded with two kinds of sausage, bacon, caramelized red onion, and melted cheese, then topped with avocado, a fried egg, and hot sauce.

  • 1 x 750 g bag frozen diced breakfast potatoes
  • 4 Cumberland sausages
  • 4 Calabrian pepper sausages or other spicy sausage
  • 8 slices bacon
  • ½ red onion, finely diced
  • 1 avocado, sliced
  • 100 g extra sharp cheddar cheese, grated
  • 60 g chilli cheese or Pepper Jack, grated
  • 4 eggs
  • Vinegar-based hot sauce, for serving
  1. Preheat your Blackstone Air Fryer to 400°F (200°C).
  2. Add the frozen potatoes to the air fryer basket and cook for 10–12 minutes, shaking the basket halfway through. Alternatively, cook the potatoes directly on the griddle.
  3. Meanwhile, preheat your Blackstone griddle to medium-high heat. Add the sausages and bacon and cook, turning as needed, until browned and cooked through.
  4. Remove the sausages and bacon from the griddle. Cut the sausages into bite-sized pieces and roughly chop the bacon.
  5. Add the red onion to the sausage and bacon drippings and cook until softened and lightly caramelized.
  6. Add the cooked potatoes, sausage, and bacon to the onions. Toss everything together and cook for 2–3 minutes.
  7. Sprinkle both cheeses over the mixture and cook until melted.
  8. Fry the eggs on the griddle to your preferred doneness.
  9. Divide the potato mixture between serving bowls. Top each with sliced avocado, fried eggs, and hot sauce to taste.
