Difficulty
Medium
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup all-purpose flour
  • ½ cup cocoa powder
  • 1 ½ cups chocolate chips
  1. Set your Blackstone griddle to low heat and place six 4-inch cast iron skillets or a 6-cup muffin pan on top to preheat.
  2. Use an infrared thermometer if you have one—aim for a surface temperature between 325°F and 375°F to avoid overheating.
  3. Melt the butter and let it cool slightly.
  4. In a large mixing bowl, whisk together the melted butter, granulated sugar, and vanilla extract. Add the eggs and whisk until smooth.
  5. Stir in the baking soda, salt, flour, and cocoa powder until just combined.
  6. Fold in the chocolate chips. The batter will be thick.
  7. Divide the batter evenly among the 6 skillets or muffin cups.
  8. Cover with a basting dome and cook for 15–20 minutes, or until a toothpick inserted into the center comes out mostly clean.
  9. Remove from the griddle and let the brownies cool slightly. Top with ice cream if you’d like, and enjoy!
