Ingredients
- 904g (2 lb) 80/20 beef mince, divided into 8 x 113g (4 oz) portions
- 8 slices American cheese
- 4 soft white burger buns
- 1 small white onion, thinly sliced
- 1 large tomato, sliced
- 12–16 pickle slices
- Shredded iceberg lettuce
- Ketchup
- Mayonnaise
- Salt
Directions
- Preheat your Blackstone griddle to medium-high heat.
- Divide the beef into 8 loose 113g portions. Avoid overworking the meat.
- Lightly oil the cooking surface, if desired.
- Place the beef portions onto the hot griddle and let them sit for 10–15 seconds.
- Season with salt, then smash each portion firmly into a thin, square patty, leaving the edges rough for maximum crispiness.
- Cook for 60–90 seconds, or until a deep crust forms and the edges become crispy.
- Flip the patties, lightly season the second side, and top each patty with a slice of American cheese.
- Stack the patties into doubles while they finish cooking. For an extra melty finish, add a small splash of water to the griddle and cover with a dome.
- Lightly toast the burger buns on the griddle.
- Spread ketchup and mayonnaise on the bottom bun, then add a double cheeseburger stack.
- Top with pickle slices, sliced white onion, tomato, and shredded lettuce.
- Finish with the top bun, give it a light press, and serve immediately.
