Ingredients
- 150 g unsalted butter
- 4 slices brioche bread, cut 1 inch thick
- 4–5 cloves garlic, crushed and sliced
- 2 slices Gouda cheese
- 2 slices chili cheese
- 2 slices mozzarella cheese (or torn fresh mozzarella)
- Oil, for griddle
Directions
- Preheat your griddle to medium-high heat and lightly coat the surface with oil.
- Place the butter in a griddle-safe pan or foil cup and allow it to melt gently.
- Add the garlic to the melted butter and let it infuse while you prepare the bread.
- Brush one side of each slice of brioche generously with the garlic butter.
- Place the bread on the griddle, butter-side down. Brush the top side of each slice with more garlic butter.
- Cook until the bottom side is golden brown, then flip the bread and move it to a cooler area of the griddle.
- Divide the Gouda, chili cheese, and mozzarella evenly between two slices of bread, layering the cheeses on the toasted side.
- Place a melting dome or cloche over the bread and cook for about 2 minutes, or until the cheese begins to melt.
- Top each cheese-covered slice with a remaining slice of bread to form two sandwiches.
- Cover again and continue cooking, flipping occasionally, for 2–4 minutes until the bread is crisp and golden and the cheese is fully melted.
- Remove the sandwiches from the griddle and let them rest for 1 minute.
- Slice in half and brush with any remaining garlic butter before serving.
